Andrea is to blame for this wonderful recipe. She was looking for something simple and good to make that we would would enjoy in our own way. Although some of us questioned the recipe because it challenged our typical baking ways, we all powered through and where very surprised but the results. The recipe was taken from Minimalist Baker blog (we are beginning to think this is one of Andreas favorite food blogs) and the Vegan Gluten-Free Vanilla Wafer recipe was very easy to follow.

Ingredient substitute: Stevia instead of sugar

Experience doing the recipe:  This is by far the easiest best cookie dough I have ever made. There is no way to mess it up. The way everything blends together is amazing. I have never cooked with coconut oil this way before. The dough cane together really quick. I let it rest for longer than indicates on the recipe as I was multitasking. Results were the same. Rolling the dough out, I did noticed that there were traces of coconut oil everywhere. I never had to dust my rolling pin nor the surface. They did not stick to the mat or my hands either. I believe I was too excited rolling this out that my cookies where so thin they curled up while baking. Taste wise, they tasted like nothing. I think the Stevia killed this wonderful recipe. I then resorted to ice them with Pillsbury sugar free icing. That made this better. These cookies were gone within the hour. 

Would you try doing the recipe again? Yes, my husband and daughter loved these cookies. Next time I will use sugar and no frosting. Also will try to make them a bit thicker to avoid the dough to curl up when it’s

Tools for the recipe: measuring cups, a mug to do the round shape, and a kitchen aid helper to mix the dough and the aquafaba

Ingredient substitute:  I substituted the flour for almond flour, cassava and gluten free flour

Experience doing the recipe: This was a team effort because my hubby wanted to help so he did all the measuring of the ingredients and I put it together. The beat for this one was Ariana Grande. The mix was easy to do and great consistency to roll out the dough. I made the mistake to leave them 5 more minutes in the oven and that made them crunchier which wasn’t bad but I would’ve probably prefer them softer. This cookies reminded me of homemade cookies that my grandma used to make back home in Venezuela and it inspired me to ask her for the recipe and make those other cookies too. Yey for childhood and taste that takes you back to grandmas house and her hugs.

Would you try doing the recipe again? It was good and easy so yes I would make it again

Tools for the recipe: mixing bowl, mixer, measuring cups, whisk, mini cupcake pan

Ingredient substitute: Yes, I am in the middle of moving so I didn’t no want to buy additional ingredients so instead of vegan butter I used regular butter. Also I didn’t have gluten free flour so I used coconut flour instead in addition to the almond flour.

Experience doing the recipe: I was excited for this recipe as it used aquafaba however as I followed the recipe I was doubting every step. Towards the end, it’s when the dough really comes together. My 2 year old decided to join me so we made cookies into the mini cupcake molds, but I actually thinks that was the best way to go. I noticed the dough was slightly crumbly but it’s probably due to using coconut flour. Once these cookies were done and I tried, they are pretty plain. If you have additional ingredients I would use the cookies to make something else or top them with frosting or chocolate.

Would you try doing the recipe again? It may have been that I did not have gluten free flour but I would not do this recipe again

Ingredient substitute: I didn’t have any gluten free flour so I used regular and I didn’t have any almond milk so I used fat free regular milk.

Experience doing the recipe: Once again, these girls are testing my baking believe system! No butter, flour or egg baking? What’s that? But I will try it, I will try it.

Unfortunately, I am in the process of moving so I didn’t want to buy anything I didn’t have in my fridge or that I regularly use. So I made a couple of substitutions of the flour to regular flour and almond milk to regular milk. I made the garbanzo bean water mix thing first and made sure I had it ready then I followed the recipe making my substitution.

I used a small Ninja toaster so I put the temperature to 335 degrees and cooked them for 14 minutes in two different batches. To be honest the cookies came out “okay”. They didn’t taste like much in my opinion but they where a good canvas for decoration. I separated them in two portions. On half of them I did a lemon icing with a little bit of lime zest for flavor and coloring. On the other half I made little cocoa nut butter sandwiches and sprinkle some powder sugar on top. They made for a great picture and actually tasted really good.

Would you try doing the recipe again? yeah they where easy enough to make and I would actually try to make it with the gluten free stuff just to try it. Plus like i mentioned they where good canvas to be creative and cute maybe even different sizes and shapes.

Tools for the recipe: Wax paper, baking pan, bowls, spatula, rolling pin. Round glass and pasta for shaping the cookies

Ingredient substitute: I did not use brine, GF flour or almond flour. Made the recipe exactly the same but without those ingredients

Experience doing the recipe: It was very easy to make personally, without the GF flour or the almond, it wasn’t that much different than making a regular vanilla cookie.

I was excited to try the patterns on the cookies that I have seen online with the edge of a pasta, and they were so easy to make. Played with different things like a fork and the edge of a knife to make different shapes

Would you try doing the recipe again? Of course, easy and fast to make!
