Frozen Yogurt Bark with Berries

After taking a week break from the recipes, as all of us had something going on last week, Andrea brought us back with a sweet surprise! this delicious recipe was not only easy to make but it was fun and very yummy. The recipe was from Eating Bird Food and it fit right into the summer theme with its delicious berries and cool feel. The Frozen Yogurt Bark with Berries sure was a treat!

Tools for the recipe: Silicone mini cupcake baking sheet, Baking sheet, Spatula

Ingredient substitute: Skipped coconut, Extra maple syrup

Experience doing the recipe:  I was struggling in the healthy snack department. When this recipe came along, I was excited because, first I had extra yogurt at home, second, I could make it in 5 min. I had all the ingredients and decided to skip the coconut since my daughter does not like it. I doubled on the maple syrup since when I was done mixing it the yogurt was still too sharp for my liking. My freezer space is limited, so I decided to use the mini cupcake container. This is very refreshing, and I ate 3 at once. Its consistency was more like ice cream than bark, but I loved it.

Would you try doing the recipe again?  Yes, my daughter loved it and ate them as if they were ice cream cups. Leftover bark/cups were used for smoothies.

Tools for the recipe: baking tray, parchment paper, bowl, silicone spoon, knife

Ingredient substitute: I didn’t substitute anything but I added dark chocolate drizzle on top and I used honey instead of maple syrup

Experience doing the recipe: It was quick and easy. I did it in less than 10 minutes. The mix was easy and I love the taste of it while making it. Lay it down added the fruit and the chocolate and left it 3 hours in the fridge. Yummy yummy in my tummy

Ingredient substitute: I used all same ingredients, for the optional ingredient shredded coconut, I decided to use melted chocolate

Experience doing the recipe: This is a keeper! Such an easy recipe and a different way to use up yogurt! Very simple to put ingredients together and assemble. After the bark froze, I broke it into pieces and placed in a Tupperware and placed it back into the freezer to eat during the week! The last few pieces I had left to eat towards the end of the week, I had forgotten and left out that day, so it thawed out. But it was still delicious as I just simply mixed it and still was tasty!
