Chickpea Cookie Dough

This recipe was picked by our girl Bere. She wanted to throw our palettes for a loop. Definitely not a conventional recipe but really fun and easy to make. Bere got the recipe from one of her favorite food blogs From My Bowl and used the recipe for the chickpea cookie dough which was easy to follow.

Tools for the recipe: Food processor and silicone spatula

Ingredient substitute: I used peanut butter and coconut flour instead of oat flour

Experience doing the recipe: I honestly felt that I was making hummus. The recipe is quick and is all in one pan(Mixer) kind of deal. From the bottom of my heart I felt I was eating chickpeas with a spoon previously used to mix pancake batter. Anyway, the prep time as well as cooking time is completely accurate. One thing for sure, I over processed the chickpeas so my coconut flour rescued the dough and brought it back to dough consistency. 

Would you try doing the recipe again?  No. I am a sweet and salty lover but not this time

Ingredient substitute: I didn’t substitute anything but I used peanut butter as the nut butter and almond flour

Experience doing the recipe: I was really hesitant to make this recipe because I didn’t know what the outcome would be and because I knew that I probably wouldn’t eat it. So I started this recipe with all the ingredients and set myself as an experiment to  see if I could bake it into a cookie later on. I turned on my reggaeton because it deserved some upbeat music to my crazy hesitation. The process was easy to put everything into the food processor and fold in the chocolate chips. The big part came when I had to try the cookie dough so I closed my eyes and said here we go!. To my surprise it was actually pretty good. It was a sweet spread and the chocolate chips made it feel like a nice treat. Once I took my pictures I decided to bake the mix for 15 minutes at 350 degrees. I let them cool and tasted it and it was pretty good. I would say that I would’ve added more flour and maybe baking powder to have a better consistency but overall it was pretty good. Thanks Bere for getting me out of my comfort zone with this recipe

Would you try doing the recipe again? I would say probably not because I don’t fully enjoy cookie dough but I would try to find a way to make it into a cookie. :)

Ingredient substitute: Yes, Chickpea cookie dough has always been on my list of recipes to make. I finally did it and it did not disappoint! I thought of a savory ingredient being able to be used as a sweet delight brought me joy! I had used aquafaba ( chickpea bean brine) to make chocolate mousse but I had never done anything sweet with chickpeas. For this recipe I used sugar free chocolate chips, oat flour and date puree ( soaked dated and puréed in Ninja). Recipe was easy to make, when I tried it after blending all the ingredients it tasted good. But I decided to eat a spoonful after refrigerating for 2 hours! It tasted even better!

Experience doing the recipe: Well my experience I noted above! This recipe I would recommend for sure but it will not replace eating traditional cookie but it’s a great use of savory ingredients to make a sweet treat that’s nutritious as well!

Would you try doing the recipe again? Yes and yes! Next time I may added cocoa powder to make it extra!

Tools for the recipe: Nothing special, blender, spatula, bowl

Ingredient substitute: I didn’t have syrup so I used good old fashion sugar

Experience doing the recipe:  Recipe was easy, put everything in the blender except the chocolate chips.

I used almond butter (the recipe called for “any kind of nut butter”) and I think that where I started to go wrong. The almond butter was too strong a flavor. Also, I think because I didn’t use the syrup but just regular sugar, the mix got very thick so I had to add some water.

I am not sure if I just didn’t blend it enough, I don’t have a food processor, but I thought it came out a little grainy. I added the chocolate chips and tried it and I was not a fan. Then I put it in the fridge for a while and tried it again and, not a fan again.

Would you try doing the recipe again? The only reason I would try it again is because I would like to try it with creamy peanut butter instead of the almond butter to see if the flavor changes. Other than that….no probably not…

Ingredient substitute: I used honey instead of syrup!

Experience doing the recipe: I was not looking forward to it. The reviews among my friends… weren’t necessarily appealing (haha!)

However, it took me less than one minute to make, and not too bad. It’s basically a less sticky peanut butter, a very healthy snack solution when you need a boost of sugar without the terrible damage!

Not something I would eat as a full dessert, but I have had spoonfuls of it every other day.

Would you try doing the recipe again? If I am craving peanut butter… maybe
