Ana had the pleasure of picking this weeks recipe and she made us feel right at home. The Chicken Tortilla Soup was warm and comforting for all of us. I think it came at a perfect time where all of us need the feeling.  The recipe came from delish.com and was easy to follow and make.

Ingredient substitute: No spices

Experience doing the recipe: I am pleased on the fact that this is a can to pot recipe. It is convenient and overall inexpensive, I spent about $10 on it. I chose to use the Crock Pot. I decided to save some time and I boiled my chicken break separately. I shredded it by using the mixer and got a lot of chicken. When I was combining my ingredients, I noticed that there was more chicken than liquid, so I doubled the amount of chicken broth. I skipped the spice. My cooking time was reduced to just 2 hours. Cooking the chicken separately did not take away any flavor but saved a lot of time. Also, I was able to feed 6 adults twice and still had leftovers. One last thing, my tortillas in the air fryer were a hit. It took me 3min at 395F and they looked crispy and oil-less. This has tons of flavor and it can pass as restaurant made.

Would you try the recipe again? Definitively, as the prep time was short, and it cooks by itself

Tools for the recipe: slow cooker, measuring cup, olive oil cooking spray & pizza cutter for the tortilla, can opener, wooden spoon and a food processor for the onions/ bell peppers

Ingredient substitute:  I substituted the cilantro for green onions to garnish. The chicken broth for vegetable broth because it’s what I already had. The sour cream for small pieces of goat cheese and I added chili flakes instead of chili powder (this made it a little more spicy). Monterrey Jack I subbed for plain cheddar

Experience doing the recipe: It was sooooo quick and easy. I chopped the Bell-peppers and the onion the night before and they were ready to go the next morning. I opened all the cans and had all the measurements for the ingredients and I dumped it all in the slow cooker. Since I used a chicken that was ready to go I cut the time to half on the cooker so 3 hours and a half on high. Once the time was up I added the cheese and cooked for 15 on slow. Added the toppings and Yummmmm the taste is just SPECTACULAR!

Would you try doing the recipe again?  Absolutely!! It was delicious and I wanted to serve myself a second round. The hubby doesn’t like soups much but once he tasted it he said “WOW”

Ingredient substitute: Yes, I had no stock or fire roasted tomatoes so I used tomato sauce, water and roasted my own tomatoes at home with my gas stove top but you could also roast them on the grill or oven
 
Experience doing the recipe: Super easy recipe and I also see myself doing this recipe often since I usually have most of the ingredients. Even though I didn’t have a few of the ingredients on hand, I really enjoyed how it came out. The tomato sauce gives a creamer consistency. I also made the soup with frozen chicken breast and since I did not have slow cooker I used my ninja foodie. I set it to pressure cooker on low for 2 1/2 hours. Once is was done the chicken shredded so easily with a fork. The recipe taste even better 1-2 days after making. It is also a great recipe to make in bulk an freeze. And it is a recipe that you could always add more to it such as other beans or any veggies you might need to used before they go bad. Topping the soup with sour cream or yogurt, cheese and cilantro really made the soup amazing!
 
Would you try the recipe again? Yes, and I was so happy with how it turn out using the substitutions

Ingredient substitute: Pepper gives me heartburn so I used 1 instead of 2, plus the roasted tomatoes can I bought I didn’t realize had green chili so I did half a tbs of chili powder instead of a full one since I am not a fan of spicy

Experience doing the recipe: By far the easiest recipe we have made. I woke up early morning and cut all my veggies. I followed the recipe step by step. Raw chicken, cans, veggies, spices, and chicken broth. Put the lit on and set it on low for 6 hours (I figured I would have it for lunch). I work from home so during the morning the smells was driving me crazy (in a good way). I couldn’t concentrate on work, I kept checking on the soup, specially the chicken and when it hit the 4 and a half hours, the chicken was falling apart. I took it out, shred it and mixed it back in, put the cheese in there and close the lit back up for another 30 minutes (I might or might not have sneaked a couple of spoon fulls in to try it).

When the timer went off it was 12:30pm, do I have good timing or what! I didn’t even bother to take a picture, I served my soup, put all the bells and whistles on it (garnish) and sat down in all my glory. Let me tell you, it was DELICIOUS. Even though I have never made this, nor is this a family recipe, it taste like home, it was warm and comforting and so good! Later, after work, I put another bowl together for the picture, took my picture, and went to town on the second bowl for the day.

The recipe does make a whole lot of soup and for a single girl it’s a little hard to go through. So I separated into several single serve container and put it in the freezer. Now I will just be a quick reheat away from warm comfort food. 

Would you try the recipe again? Heck yeah I would! Easy to make and easy to store in the freezer, wonder if it will taste just as good when I take it out of the freezer and reheat

Ingredient substitute: None

Experience doing the recipe:Well, I love Chicken Tortilla soup, however I do not own a Slow Cooker. So decided to make it like I would any other soup and just let it cook in slow for about only two hours.

I stirred fry all the veggies, minus the black beans and corn. Mixed it all up with the spices, added the chicken, put the stove on high until it boiled and brought it down to the minimum.

After about 20 min took the chicken out and shredded it, put it back in and added the black beans and corn.

I let it cook for about two hours on low. It was late at night so I turned off the stove and left it covered to cook/cook overnight.

I air fried the tortilla chips and THAT WAS AMAZING! It tastes delicious and was proud that I forced myself to do it even without a slow cooker. Also, I would love to try it once I do have the slow cooker one day, I can see how the taste can be so much more rich with it

Would you try the recipe again? Yes, but with a slow cooker
