To start off the rotation of picking the recipes our girl Cori felt she needed to test our veggie tolerance. She picked out this recipe that she has been wanting to try for a while. The recipe from The Natural Nurturer is easy and fun to follow. Definitely a must try Broccoli Tots recipe.

Ingredient substitute: Used Parmesan cheese

Experience doing the recipe: I am for broccoli if it is completely covered in cheese sauce. This was a very good way to eat my veggies and keep the cheesiness going. I cooked the broccoli in my air fryer, the 3 cups at 320 degrees for 10min. Then I moved all the broccoli and remaining ingredients to my food processor. The dough came together very quickly and even though I used Parmesan cheese, the broccoli flavor and aroma remained. This mix was very soft but not runny. I used a cookie scoop instead of my hands and created little balls. Banking instructions were right on point. The overall recipe took me 15 min. this tasted super delicious. I paired it with ketchup and ate them all in one sitting.

Would you try doing the recipe again? Yes, I loved that all goes in one pan. I am wondering how will they turn out with cheddar cheese instead.

Ingredient substitute:  I substituted the Italian dressing for a cilantro dressing and I didn’t  have garlic powder so I used normal minced garlic.

Experience doing the recipe: It was super easy ingredients and to put it together I didn’t use a food processor I just cut the broccoli super small then I felt like the mix was a little too liquid and I had Seen the other girls texture that it was kind of solid and I thought about it but I was so busy with work that I said well it is what it is. Then I asked the girls and Bere said with the Oat flour it should be fine and AHA that is exactly what I missed from the recipe 🙈 but oh well I said they will probably come out like a broccoli omelette and it did but it tasted delicious. 

Would you try doing the recipe again? I would totally try this again specially with the oat flour I’m sure its even more delicious.

Ingredient substitute: No substitute !

Experience doing the recipe: As a dietitian I love to add veggies wherever I can! My meals always include veggies! And this recipe is awesome as I can have them as a snack or part of a meal! You could even turn them into patties. For this recipe I used the oat flour and blend it all in my Ninja on pulse mode. I am currently moving to another state so I was not able to air fry them so I did then in the oven. They turned out great, and they are also fun to offer to kids as well. This first time testing them my kids where not very fond of them but I will try again!

Would you try doing the recipe again? Yes and yes!! And I think testing other veggies would be fun too! And even trying other dips. I had them one day with ketchup but another day I had them with hummus! Yum!

Ingredient substitute: none! well I used Parmigiano Reggiano instead of Cheddar but the recipe says you can :)

Experience doing the recipe: Well, let me begin by saying that I was not in my kitchen. I just moved cross country and was staying at my mom’s house when I had to make this recipe. So I had to do with everything she has (which, don’t get me wrong, she has an amazing kitchen, she showed me everything I know, but still it wasn’t my kitchen and I wasn’t sure where things where) so I boiled the broccoli and then decided to cut it instead of blending it or putting it in the processor. It all was very easy to me, cut the broccoli and put everything together, then shape them.

I did get a chance to put them in the air fryer, that, I think, gave it an extra crunch. I set the air fryer to 400 degrees and did 5 minutes, turn them and did 5 more minutes. I cooked a salmon in the oven and we had the tots and salmon for lunch. Very very yummy side for any dish or even to eat them as a snack.

Would you try doing the recipe again? Absolutely, easy way to get my veggies in and like I mentioned before I think that they go well with any meal. I would like to dry the broccoli a little bit more next time though, I felt the mix was a little too wet, but still very yum!
